Export carcasses are classified according to ‘Fat Cover’:
Y - Low fat content
P - Medium fat content
And by weight:
L - 9.0kg - 12.5kg
M - 13.0kg - 16.0kg
X - 16.5kg - 20.5kg
H - Over 20.5kg
A combination of these factors give 7 carcass categories:
YL
9.0kg - 12.5kg | Fat content (GR) | Up to and including 6mm
YM
13.0kg - 16.0kg | Fat content (GR) | Up to and including 7mm
YX
16.5kg - 20.5kg | Fat content (GR) | Up to and including 9mm
PL
9.0kg - 12.5kg | Fat content (GR) | Over 6mm, up to and including 12mm
PM
13.0kg - 16.0kg | Fat content (GR) | Over 7mm, up to and including 12mm
PX
16.5Kg - 20.0kg | Fat content (GR) | Over 9mm, up to and including 12mm
PH
20.5kg and over | Fat content (GR) | Over 9mm, up to and including 12mm
GR = A fat content assessment based on measurement of total tissue depth over the 12th rib at a point 11cm from the midline of the carcass.
